Harry Guy's X to Redefine Chester's Fine Dining Scene by 2026
A new fine dining restaurant, X by Harry Guy, is set to open in Chester by 2026. The 50-cover venue will mark the first solo project for acclaimed chef Harry Guy, fulfilling what he calls his 'ultimate career goal'. Backed by The WILDES Hotel Group, the restaurant aims to redefine the city's culinary scene with bold British flavours and top-tier produce.
Chef Harry Guy brings a wealth of experience to the project, having trained in renowned kitchens like L'enclume, Roganic, and Gordon Ramsay's Savoy Grill. His credentials include winning the prestigious Roux Scholarship in 2016, a competition known for shaping some of the UK's best chefs. After four years of meticulous planning, X will finally open its doors inside Wildes Chester, an 18-bedroom boutique hotel launching in summer 2022.
The restaurant's design will feature an 'invitingly dark' interior with a warm, intimate feel. Diners can expect a 'gastronomic journey' focused on exceptional hospitality and dishes that prioritise flavour above all else. The menu will showcase the finest British ingredients, reinforcing Guy's commitment to quality and craftsmanship. Wildes Chester itself will offer more than just dining. The hotel includes a **rooftop pool**, an **amphitheatre sauna**, and a terrace with sweeping views of the city. Paul Wildes, CEO of The WILDES Hotel Group, has made it clear that X is part of a broader vision to establish Chester as a destination for high-end dining. Nearby competitors like **Simon Radley at Aumbry**, **Sticky Walnut**, and **The Grosvenor Pulford Hotel & Spa** already cater to upscale diners, but X aims to carve out its own distinct identity.
X by Harry Guy will join Chester's growing fine dining landscape when it opens in 2026. The restaurant's focus on bold British cuisine, combined with the luxury setting of Wildes Chester, positions it as a standout addition to the region. With Guy's pedigree and the backing of The WILDES Hotel Group, expectations are high for a venue that promises both culinary excellence and a memorable experience.
